I love having these Easy No-Bake Energy Bites around for a quick, grab and go snack! They’re a quick boost of protein, fiber, sweetness and just all-around delicious!

My husband takes granola bars to work pretty much everyday for a snack, and I’ve made homemade ones for him before, but they either don’t stay together, or I just don’t feel like baking them. That’s where these no-bake energy bites save the day! One bowl, mix it up, roll em up, and done! Plus, is it just me, or are store bought granola bars these days tasting more and more like cardboard?? Maybe I’m just spoiled with these….

Gather It!

Here’s what you’ll need:
- Oats (Old-Fashioned or Rolled)
- Peanut Butter
- Honey
- Shredded Coconut (sweetened or unsweetened)
- Chocolate Chips (I use regular size because that’s what I usually have on hand, but mini chips would mix in even easier)
- Ground Flaxseed Meal (optional, but adds extra protein, fiber and omega 3s!)
- Vanilla extract
- Medium size mixing bowl
- Measuring cups
- Spoon or spatula

Let’s Make It!



In your bowl, add:
- 2 Cups Oats
- 1 Cup Peanut Butter
- 1 Cup Shredded Coconut
- 2/3 Cup Honey
- 1 Cup Chocolate Chips
- 1-2 tsp Vanilla
- As much or as little Flaxseed as you like
Mix well, then put in the fridge to chill for 30 min to 1 hour – you don’t want to skip this to save on time. Working with room temp peanut butter is…..gooey.

Once your energy bites ‘dough’ is chilled, remove from fridge and roll into about 1 inch balls.


And that’s it!
So easy, so good, and so so much better than the grocery store!
This is a great recipe to have your kids help with if you have a toddler like mine that insists on helping you with all your cooking haha
And as long as you keep the Oats/Peanut Butter/Honey ratio, this is an easy recipe to make all your own. Here’s some variation ideas:
- Diced dried fruit
- Different chocolate chip flavors
- Mini M&Ms
- Cocoa Powder
- Nut or seed butters
- Chia Seeds
- Seasonings like cinnamon or pumpkin pie spice
- Make into bars instead by pressing into a parchment paper lined 8×8 baking dish, chill, then cut into bars

Easy No-Bake Energy Bites
Ingredients
- 2 Cups Oats
